  • Fermentation: The grains are mashed and fermented to produce a base alcohol. This involves converting the starches in the grains into sugars, which are then fermented by yeast to produce alcohol.
  • Distillation: The base alcohol is distilled in a bespoke, hand-made copper still named Janet. This still is designed to extract the aromatic compounds from the botanicals, which include juniper, coriander, citrus peel, cinnamon, and more.
  • Botanical Infusion: Each botanical is placed in specific chambers within the still, depending on how it best interacts with the base spirit. This careful placement ensures that the flavors are extracted optimally.
  • Blending and Bottling: After distillation, the gin is blended with Kentish chalk-filtered water to achieve the desired flavor profile. It is then bottled and labeled, ready to be enjoyed.
