It takes a maverick spirit to turn the idea of building a craft distillery into a reality. But in Clonakilty, the Rebel County, that spirit thrives. Located on Ireland’s southwest tip, this rugged coastline is where 3,000 miles of ocean meet land, whales bask offshore, and the weather is so wild even lighthouse keepers gave up. People like the Scully family, who have farmed this land for nine generations, believe Irish whiskey can be improved by harnessing natural elements sustainably. They grow heritage barley in the salty air, soft rain, and sea mist, and draw pure spring water from deep within ancient rock formations.

They built their own distillery to craft exceptional whiskies their way. Using both un-malted and malted barley, they extend fermentation time to let natural yeast enhance the flavor. They triple-distill the whiskey for a lighter, sweeter spirit and add water slowly in a process they call the ‘gentle cut’. The whiskey is aged in oak casks exposed to the Atlantic air, maturing for as long as needed, even if the angels take more than their share.
