An Irish Autumn Road Trip

When our small Dutch delegation set course for Dingle, the trip already felt like a promise: three days where nature, tradition and craftsmanship would meet. The weather was on our side, laying the perfect foundation for an intense and inspiring introduction to the region and the distillery.

Dingle and the community

Dingle sits in the far southwest of Ireland, where the bay and the climate unmistakably influence the whisky maturation process. Once primarily a fishing village, it has grown into a community with its own customs and lively traditions. One of those is Wren Day: a colourful, sometimes surprising ritual with costumes and even a cold plunge in the sea at the end of December. That local culture lives on in special releases, like “Lá an Dreoilin”, the closing chapter of the Celtic Wheel of the Year series — a bottling that captures Dingle’s celebratory spirit.

At sea and over the pass

We boarded a RIB for a trip across Dingle Bay and were rewarded with more than forty dolphins, seals and dramatic views toward the open ocean. Later, the drive over the Conor Pass offered panoramic vistas that take your breath away and completed the region’s experience.

Inside the warehouse

The warehouse, led by Paddy and his team, is both a logistical and experimental heart: over 8,000 casks rest here, from first-fill bourbon to sherry and other finishing barrels. We tasted straight from cask, previewed future releases and exchanged tasting notes with guests from the US, Europe and beyond. Splitting into two groups ensured personal attention and made the tastings particularly valuable.

🥇 A festive spirit

The visit felt celebratory on a dozen levels. Dingle’s recent gold-medal wins were still in the air, and the community mood was infectious. After the formal tastings we found ourselves at an impromptu after-hours gathering — laughter, folk music, and whisky poured with proud hands. That combination of craft and conviviality is the soul of Dingle.

The distillery itself

Just outside town, in a former watermill, you find Dingle Distillery. Craftsmanship is visible everywhere: the deep well water, copper stills, washbacks and a hands-on approach. The triple distillation and the way different casks interact show what true craftsmanship means. The gathering of locals, founders and guests culminated in an informal after-hours drink — exactly the kind of moment that connects flavour and story.
